High-Fibre Pumpkin Scones

This is our fibre-packed take on a classic Aussie pumpkin scone recipe, originally made popular in the early 1900s by Lady Florence Bjelke-Petersen.

We've made a few adjustments to Lady Flo's classic recipe to create a healthier sweet treat. These scones are also quicker and easier to make than traditional scones.

ur gut®, wholemeal self-raising flour and Lupin Co lupin flour help boost the fibre content. Lupin flour also provides a protein boost, with a protein content of approximately 40% by weight. Mashed pumpkin ties it all together while helping to keep added sugar to a minimum.

To further increase the fibre content and add an antioxidant boost, we've paired these scones with a ur gut® berry compote.
