One Pan Easy Shakshuka

Crunchy, creamy, a little spicy… and secretly doing a lot for your gut

Ingredient List

  • 1 brown onion (diced)
  • 1 red capsicum (diced)
  • 4 garlic cloves (minced)
  • 1 can whole peeled tomatoes
  • 1 can of chickpeas (drained)
  • 2 tsp paprika
  • 1 tsp cumin
  • 0.25 tsp chilli pepper (or more to taste)
  • 6 eggs
  • Salt and pepper to taste

To serve (optional):

  • Half an avocado per person
  • Slice of sourdough wholemeal toast, pita bread or wholemeal wrap
  • Coriander for garnish
  • Crumbled feta (for garnish)

Instructions

  • Heat olive oil in a deep pan. Add the onion and capsicum and sautee for roughly 5 minutes.
  • Add the minced garlic and spices and cook for 1 minute, stirring constantly so the spices don't stick.
  • Add in the canned tomatoes and break apart with a large spoon. Add in the drained and washed chickpeas, along with the ur gut. Bring the sauce to a simmer and season with salt and pepper.
  • Make 6 wells in the sauce using a spoon. Gently crack an egg into each well. Cover the pan with a lid and cook the eggs to your liking (about 5-8 minutes)
  • Garnish with coriander and feta before serving. Serve with your choice of bread and half an avacado for a well rounded meal.

Please note: that ur gut® should be added into the sauce at the time of eating, we would suggest eating ur gut® at the time of adding it into your food. Because it contains psylium husk, it can change the texture of food if it is added in advance. If you are using this for meal prep, split the sauce into seperate containers and put in 10 grams of ur gut in when you are at work or on the go!
