


Claus is an Associate Professor in Nutrition in the Edith Cowan University School of Medical & Health Sciences and is the Associate Dean of Research. Professor Christophersen has a MSc from the University of Copenhagen (2003) and a PhD from the University of Western Australia (2008). He undertook a Post-Doctoral appointment at the CSIRO Preventative Health Flagship (Adelaide) before becoming a research scientist in CSIRO Food and Nutrition. He returned to Perth in September 2015 to take up a lecturing/research position in the School of Medical and Health Sciences at Edith Cowan University

Amanda is Edith Cowan University’s Professor of Public Health and Nutrition; Associate Dean, Public Health and Occupational Health and Safety, a research lead in the Nutrition and Health Innovation Research Institute (NHIRI), Associate Investigator in the Centre of Research Excellence Digital Child; an international expert and leader in nutrition science and public health nutrition; and an expert knowledge broker. Amanda’s research has focused on high quality randomised controlled trials investigating how diet and lifestyle affects bone, vascular, gut and mental health across the lifespan. To extend the reach and impact of these research areas, with others, Amanda has produced four cookbooks and developed websites to implement and translate public health and educational projects.

Tina has completed her PhD study at ECU commencing in 2019, with her previous education in Preventive Medicine and Epidemiology. The study scientifically evidences the benefits and effects of ur gut fibre in people with IBS who followed a low FODMAP diet. She has been conducting more research on ur gut in broader communities to improve gut health for athletic subjects and community members. Her other research focuses on healthy eating and shopping behaviours in individuals with neurological conditions

Jo is an accredited practising dietitian and researcher focusing on the intricate connections between diet, gut health and mental well-being. Her background spanning food service management, small business administration, and the health and fitness industry, equips her with a multifaceted perspective on nutrition and its practical applications.
Jo’s PhD investigated community cooking programs, cooking confidence and biomarkers of mental health, gut health and general health, during which she established a comprehensive dietary fibre and resistant starch database for Australian foods. Her post-doctoral research includes being part of the ur gut® team and involvement in various intervention trials for alleviation of IBS. Currently, Jo is co-lead on the Brain Bites project to develop a co-designed weekly meal box solution for individuals with neurological conditions.
